The last few days...
My Husband and father in law upgraded the electricity in our home from fuses to breakers and up the amperage in the house as well (My FIL is a master electrician and my hubby is a great supervisor :) really he is that is one of the things he does while working on the railroad!)
So while the electricity was being done on Tuesday my sister in law and I took the kiddos to the Toledo zoo. It was very hot and we sweat out some major toxins! - or we were just a sweaty mess whichever! Then we went to Famous Dave's for dinner and went to the Franklin park mall which was a nice big mall. Our last stop was the Children's place and they were having clearance for 2.99 i bought 10 things for the kids and paid a little over 30 bucks! I was soooo excited!
Then my mom called on Wednesday night and asked if we wanted to go to the Cleveland zoo on Thursday. So we went to the zoo on Thursday as well. It was very fun and the kids both enjoyed themselves.
Then on Thursday night I took a walk in the garden with my Dad and we found lots of zucchini and yellow squash that were ready to go. We also found a few cherry tomatoes that were fully ripe and some big tomatoes that Dad pulled off the vine to ripen in the window sill. We also got 5 cucumbers - which are already consumed! We also pulled up 2 onions just to see how they were doing.
For the cucumbers i peeled them ( I know shame on me!) and then sliced them added 2 tablespoons of buttermilk ranch and some milk to make it go further and a sprinkle of season salt!!! YUMMY!!!!
We will be making another trip to the garden today as it has some MAJOR weed control needed! Insert Mommy and her hoe!!! Wish me luck! :)
For Dinner tonight we are having a beef roast with a packet of Lipton mushroom and onion soup poured on top and the small onion from the garden sliced on top with some water poured over top...I have got to say it is looking SO SO good!
In order for me to start with my goals of being a better mommy and housewife I plan on taking the leftovers shredding them and adding BBQ sauce for sandwiches early next week. I am also going to take the bones and put them in a zip-lock and throw them in the freezer to make some broth at a later date. and now that i think about it if i have a little extra i will make some beef strogginoff as well...but i don't know if we will have extra! :)

Gardening, and Canning
Gardening is something that I feel is a no brainer when it comes to doing it or not. I started gardening 3 years ago. We planted a garden that year and then didn't the following year because i was pregnant and then this year we have one again...so in being prepared to maybe catch the baby bug sometime this year i am trying to can A LOT so that if i don't have a garden next year we will be able to eat out of the this years garden until 2012...I know that probably isn't possible but I am trying all the same.
So today was the starting of canning season at the Welschenbach household which seems to be a very housewifey thing to do...that and couponing are about the only housewifey things I am good at and/or enjoy. I picked off my one long row of Blue Lake green beans and planned on going to the grocery...we (casey and I) decided to forfeit our grocery trip- do to the fact that he didn't want to stay home and watch the kids while i ran, and he didn't want to go. We tried to pick up the house a bit, and then the kiddos fell asleep and I ran to Wal-mart (not my favorite store!) and grabbed some canning seals and the canning tongs and some other items as well. We had Steak and mushrooms and corn on the cob for dinner and some grilled zucchini- which no one ate because it was well done. Casey made dinner which was very nice, but didn't clean up. I would rather make dinner than clean up the kitchen! Seriously! :) And now that the kids are in bed and Casey is at work I am canning away...go green beans go!!!

My "wish list" if you will
I grew a garden this year and have since collected over 300 mason jars to fill with goodies...now you would think that gardening is hard and sweaty work...that is until you start canning! Now THAT is sweaty work! So starting next week i am hoping to get all my canning and dehydrating started (my anniversary gifts this year...pressure canner and food dehydrator!!! I was thrilled!)
I am hoping to start freezer cooking so on my "off" nights where i just want to run out the door and have someone else make me dinner...i just pull something out of the freezer and save my husband 20-50 bucks!!! Because by the time we tip that is what we pay each time we go out to dinner!!! It is really insane when you type it and can see it in black and white! I am SUCH a bad housewife!
I also want to make freezer lunches, breakfasts and snacks
The lunches would be things like homemade pizza pockets and burritos- quick things that are individual so i can pop one into the oven and not really have to think about it when i am doing other things...like say CANNING! (I am starting to get overwhelmed by my list! YIKES)
Breakfasts would be things like muffins, pancakes, and waffles were i can just pop one in the microwave or toaster and BAM there is breakfast! We eat allot of cereal in this house and I think something like this with maybe an egg added to it would be a healthy and cheap alternative.
Snacks would be cookies *
I also want to make "Quick Lunches" to pop into a bag as i am running off to do errands so that when lunch comes around we are not swerving into McDonald's which has no become my little lady's favorite request!
So pretty much I want to get better in the kitchen by planning ahead!
Then I want to get better at cleaning my home...I have tried a list...not so good at that...so I am open to suggestions shy of beating myself in the rear to do it!
I also want to become a better mommy...planning activities and projects for my 3 year old little lady (and eventually the little gent too) and trying to teach her good habits to an organized home...which is why I am here. To teach myself these things as well
